When you are working on board, a physical training centre may be in another country, your next port may be weeks away and your leave period may already be planned. That does not mean you have to postpone the training and assessment stage of the Danish Ship’s Cook route.
Cook’s Ticket lets suitable candidates complete recognised digital training and assessment remotely. The learning stage, practical cookery video assessment and remote-proctored final exam can be planned around a proper assessment environment. After passing, you receive a Cook’s Ticket Certificate of Completion and can then apply separately to the Danish Maritime Authority for the official Danish Ship’s Cook Certificate.
The key is to understand whether you need a new official certificate or a renewal/revalidation of one you already hold. Those are not the same process.
First: decide what you actually need
Before you book a programme, ask your captain, crewing manager or employer:
“Do I need a new official Ship’s Cook Certificate, a renewal or revalidation of an existing authority certificate, or food-safety training for my current role?”
A new official Ship’s Cook Certificate
This is the route for a cook or chef who needs to qualify for the Ship’s Cook role. MLC 2006 requires Ship’s Cooks with responsibility for food preparation to be trained and qualified. The relevant flag administration sets the specific national route. 6
Renewal or revalidation
Check the existing certificate, its issuing authority and the vessel’s flag requirements. A remote programme does not automatically renew an authority-issued certificate. The issuing authority or flag administration should confirm the correct renewal or revalidation step.
Food-safety or company training
A person working in a galley under qualified supervision may need food-hygiene or role-specific training rather than a new Ship’s Cook certificate. MLC distinguishes qualified Ship’s Cooks from other catering staff, who must be properly trained or instructed for their work. 6
What you can complete remotely
Cook’s Ticket is designed for the training and assessment stage of the Danish route. The programme includes digital learning, a practical cookery video assessment and a remote-proctored final exam. 2
That means you can begin building your qualification route without first arranging travel to a physical assessment centre. You can work through the learning content around your schedule, prepare the practical video in a suitable galley or kitchen and plan the final assessment for a time when the conditions are right.
A remote route still needs proper conditions
Plan for:
- a laptop or computer with a functioning webcam and microphone;
- reliable enough internet for uploads and the remote-proctored final exam;
- a smartphone or camera for the practical cookery video;
- a suitable galley or kitchen for the practical task;
- uninterrupted time away from watchkeeping and operational duties; and
- a quiet, compliant environment for the final assessment.
If the connection is unreliable at sea, complete the final exam in port, during shore leave, at home or at another suitable location. Remote gives you flexibility. It does not remove the need for a valid assessment environment.
Do not wait until you are near a training centre
For many working cooks, the advantage is timing. You can start the digital learning and plan the assessment before your next travel window appears. There is no need to begin with a flight, hotel booking or fixed classroom date merely to move the process forward.
The official Danish certificate remains a separate authority decision. The Danish Maritime Authority’s application route can require documents relevant to your background, including professional qualification or apprenticeship evidence, sea service, safety training, medical fitness and identity documentation. The route differs between EU/EEA and non-EU/EEA applicants. 5
A practical checklist for cooks working at sea
Before you start
- Confirm the vessel’s flag and the certification requirement for your role.
- Check whether you need a new qualification or a renewal of an existing authority certificate.
- Confirm access to the required camera, webcam, microphone, kitchen/galley and internet connection.
- Begin collecting your passport, sea-service evidence, medical certificate, safety certificates and professional cookery evidence.
During Cook’s Ticket
- Complete the digital learning around your operational schedule.
- Plan the practical cookery video for a proper galley or kitchen period.
- Complete the remote-proctored final exam only when you have a reliable connection and uninterrupted assessment environment.
After you pass
- Keep your Cook’s Ticket Certificate of Completion and case reference.
- Apply separately to the Danish Maritime Authority using the route that applies to your nationality and documents.
- Pay the separate authority fee where applicable.
- Keep the official certificate decision and any vessel-specific confirmation in your employment records.
Check the flag before you rely on a certificate
The official Danish Ship’s Cook Certificate has documented written recognition contexts. The UK MCA accepts qualifying official certificates from MLC-ratifying administrations as equivalent for service on UK ships, subject to its published conditions. Other written confirmations and formal application routes are recorded on Cook’s Ticket’s flag-state recognition page. 1
The correct question is always: does this certificate meet the requirement for this flag, this vessel and this role? Check medical, safety, employer and any flag-specific conditions as well.
